Brownies and Strawberry Cake: an ideal combination!
June is one of my favorite months of the year since strawberries are ripe and ready for picking!
Of course, when producer Emily Allen requested a strawberry and chocolate surprise for her special day I was thrilled. Ironically, I did not use actual strawberries in the batter, but the cupcakes still turned out to be delicious!
One common misconception of my baking is that I make up all of these recipes.
Quite the contrary!
I can barely figure out when to add more sugar or butter to my frosting! I am getting better, and I think the more I bake, the easier it will be.
Here is the recipe that I found.
I did make one change. Instead of using the white cake mix, I used strawberry. Yes, the boxed cake mix. I know. Shame on me.
But, I can honestly say these were one of the easiest batches I have made! Very quick and very tasty!
The recipe lists a yield of 48. Unless you are baking in a mini pan, there is no way you will have that many! I had closer to 36. Still a lot, but they were eaten quickly!
The most fun part for my coworkers was deciding which one to eat! It is very obvious how much brownie was in each cupcake since I used white liners. The ones with a lot of brownie were the first to go! I topped them with chocolate buttercream frosting and a fresh strawberry for garnish.
